I spent a week in Colorado this summer, housesitting for friends on vacation. Before leaving they introduced me to their lush vegetable garden neatly planted in the backyard. The bowl that you see here is filled with Japanese eggplants, tomatoes, basil, okra, and much more. Little did I know that his would be the morning harvest. I couldn’t begin to eat them all, so I invited a willing neighbor to enjoy the bounty, too. Mountains and veggies … or was it mountains of veggies?
